In Port-Saint-Louis-du-Rhône, Paul and Caroline Scotti raise their oysters in the waters of the Carteau Cove, at the heart of a landscape where the Rhône meets the Mediterranean. Their family farm was recently recognized during the 2nd edition of the 2025 Agricultural Prize for Provence Products, an initiative by the Aix-Marseille-Provence Metropolis honoring local producers committed to quality and know-how. Coming from a family of fishermen in Miramas, Paul turned to aquaculture out of passion. Since 2010, he has been part of the Carteau Aquaculture Cooperative, one of the most active in the Mediterranean. On his oyster and mussel tables large submerged structures where ropes of shellfish are suspended he has chosen a careful, reasoned approach: spacing the ropes to allow each shellfish the time to fully develop. A choice of quality over quantity, today rewarded by this regional distinction.
A taste shaped by the territory In the Carteau Cove, where the Rhône meets the sea, a naturally rich environment is created. The shallow, mineral-rich waters provide ideal conditions for oyster growth. Camargue oysters are distinguished by their firm, balanced flesh, with a briny, slightly mineral flavor a true reflection of the environment in which they grow. Paul and Caroline oversee the entire production cycle, from seeding to direct sales at the ports of Carro and Saint-Chamas. A short supply chain guarantees freshness, traceability, and direct contact with consumers. Their dedication and consistency have made the Camargue special oyster an emblematic product of the Provençal coast, symbolizing a living maritime terroir where tradition meets innovation.
